Chocolate Cupcake with Butter Cream Frosting

Valentine’s Day is always special for us.  I believe, for the persons very close to your heart, an unique way to express your love for them is by baking some of these fluffy creamy yummy cupcakes- Chocolate it is!!!

This is a very simple and easy recipe which can be prepared with few simple everyday ingredients.

Ingredients

  • For cake making
  • 1 cup All-purpose flour or Maida

  • ½ cup Cocoa powder

  • 1 cup powdered Sugar

  • ½ tsp Baking soda

  • ¾ tsp Baking powder

  • ¼ tsp Salt

  • ½ cup Butter, softened (at room temperature)

  • 1tsp Vanilla essence

  • 2 Eggs

  • ½ cup Milk (at room temperature)

  • 2 tsp Vinegar

  • For Butter Cream frosting
  • 3 cups powdered Sugar

  • ½ cup Butter, softened (at room temperature)

  • 1tsp Vanilla essence

  • Decorative sprinkles (optional)

Directions

  • Pour the milk and vinegar in a cup.  Mix it well and keep it aside.
  • In a large mixing bowl, take the butter and whisk it until light and fluffy.  Add the eggs one at a time and whisk thoroughly.
  • Add vanilla essence and the milk-vinegar mixture (from Step 1). Whisk all the wet ingredients well.
  • Sieve all the dry ingredients (Flour, sugar, salt, cocoa powder, baking soda and baking powder) over the wet mixture and mix well to combine.
  • Place the cupcake liners into cupcake moulds. Fill the cupcake liners with spoonful batter.
  • Pre-heat the oven to 180o C for 10 minutes. Place the filled cupcake moulds inside the oven and bake for 20 to 30 minutes.
  • Check with a toothpick inside the cake. If it comes out clean, then it is ready to be taken out.
  • Let it cool off completely. In the meantime let us prepare the Butter Cream Frosting.
  • In a bowl, take butter, sugar and vanilla essence and whisk the mixture thoroughly until smooth and spreadable.
  • Separate the cupcakes from the moulds and place down for decoration.
  • Fill the frosting in a piping bag with decorative nozzle.  Cut the mouth of the nozzle and decorate the top of each cupcake with the frosting. Add some decorative sprinkles on top, if you wish.
  • Yummy chocolate cupcakes are ready to be served.

Notes

  • Do not over mix the cake batter.  Simply mix the dry and wet ingredients until combine. Otherwise the cake will become gooey.
  • Instead of using milk and vinegar, you can use buttermilk.
  • If you do not have a piping bag you can decorate the cupcakes using a spoon.  Simply spread the frosting over the top and make curvy waves with the back of the spoon.
  • For whisking the frosting I have used an electric hand blender. If you do not have one, simply whisk it manually with a whisker but surely it will take some time.
